My dear friend Beth sent me this today. My immediate response was, that will be great to have at work some afternoons when it has been a stressful day. Let me give you the recipe and then I will share my thoughts with you on how this will be easy and also maybe as a great gift to co-workers.
5 Minute Chocolate Mug Cake









4 tablespoons of flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (MicroSafe)
Add dry ingredients to mug, and mix well.

Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.

The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.EAT ! (this can serve 2 if you want to feel slightly more virtuous)

Ok, This is a great way to take a needed break in the afternoons. But wouldn't it be a great gift to give to your co-workers also. Pick a special day, go to the dollar store and buy mugs for your co-workers, or better yet, pic some neat ones up at the goodwill. Get the dry ingredients together and portion them out in to baggies for each mug. Put a ribbon and note on the mugs and before they get to work, put them on their desks or work areas. In the note, put, For a great suprise, meet me in the breakroom at ________ time & bring your mugs. You take the wet ingredients and have them there for your co-workers to add. Don't you think this will add a big smile to their day? Yes!!!
